Case study of Commercial Kitchen at MM Continental Hotel on 29th April 2016

On 29th April 2016, students of IIIrd year went to MM Continental Hotel, Mullana for case study of Commercial Kitchen. First of all, the hotel manager appraised all the students the basics of working of commercial kitchen. The review included the flow of supply of raw material, checking, storage, preparation and distribution of food stuff. Later on, the students were divided into groups for doing self observation including sketching and measuring different spaces of commercial kitchen. In the end the hotel manager replied to few questions of the students.
